Pete, not sure why you had so many issues with Gmail IMAP. I'm using it fine with both Thunderbird and Tiger Mail.app.
I thought the implementation was quite elegant, given the fundamental differences between Gmail and IMAP. IMAP assumes a folder hierarchy and Gmail uses a more modern tag/label system for categorising email. From a conceptual point of view you have to get used to the idea that email can live in *multiple* folders: namely the "[Gmail]/All Mail" folder plus all the folders corresponding to whatever labels you've defined.
FWIW I found this guide for setting up Thunderbird for Gmail IMAP to be quite helpful also.
